Pichti or tsiladia (as it is called in Crete) is a dish that is always on Christmas table.
1 pork head
1 kilo of pork chuck
6 cups of meat broth
1 glass of lemon juice
1 glass of bitter orange juice
½ glass of orange juice
Shaving from citrus fruits
Boil the meat in a cooking pot till it melts. Then, remove the bones and cut the meat into pieces.
Add salt, pepper, cumin and oregano.
Remove 6 glasses from the broth and add salt, the shaving from the citrus fruits and the juice. Taste the broth and be sure it is salty and sour enough to taste well when it is mixed and frozen.
Cover the bottom of the bowl with meat and pour the broth till the meat is fully covered.
Put the bowl in the fridge for a day.
